Green Hawks


The recipe comes from the Erzgebirge. It used to be often prepared in the family because it was inexpensive. There were potatoes in the field, eggs from our own chickens and quark could be bought cheaply. Linseed oil has a very typical taste and is very healthy.


  • 1500 g raw potatoes
  • 500g boiled potatoes
  • 300 g curd
  • 1 onion
  • 2 eggs
  • Salt, cumin
  • oil and linseed oil


  1. Grate potatoes
  2. Finely chop the onion
  3. Mix the potato mixture with the quark, eggs and onions
  4. Season with salt and caraway
  5. Heat equal parts oil and linseed oil in the pan
  6. Add the dough one spoonful at a time
  7. Bake until golden on both sides


Alternatives for vegans: use plant-based curd and egg substitute, e.g. silken tofu.
