Gundel Pancake

History

One of the best-known dishes named after Károly Gundel is the Gundel pancake. According to the anecdote, the recipe was not invented by Károly Gundel, but by Sándor Márai’s wife, Ilona (Lola) Matzner. According to Lola’s instructions, the special pancakes were prepared for a gathering organized in Gundel’s Restaurant, and the thin dough filled with walnuts was folded and sprinkled with chocolate sauce on the plates. Seeing the success of the dessert, Károly Gundel immediately asked Lola for the pancake recipe. After that, the dessert was on the menu as Márai pancakes for quite some time.

Ingredients

For the pancake butter:

  • 30 dkg of flour
  • 3 eggs
  • 2 tbsp of cooking oil
  • 1 cup of sugar
  • 1 pinch of salt
  • 4 dl of milk
  • 1 dl soda water

For the nut filling:

  • 2 dl of milk
  • 10 dkg of sugar
  • half a lemon
  • 25 dkg of ground walnuts
  • 2 raisins
  • 1 ek of rum

For the chocolate sauce:

  • 3 egg yolks
  • 2 dkg flour
  • 3 dl of milk
  • 1 tsp cocoa powder
  • 15 dkg dark chocolate
  • 1 ek of rum
  • To serve:
  • whipped cream

Instructions

  • Mix the ingredients of the dough until there are no lumps, let it rest for 30 minutes, then bake 14 pancakes in the usual way in a pancake maker lightly greased with cooking oil.
  • For the filling, boil the milk with the sugar and grated lemon peel, then remove from the heat. Stir in the walnuts, raisins and rum.
  • For the dressing, mix the egg yolk and flour with 1 dl of milk until smooth. Heat the remaining milk, cocoa powder and chocolate broken into pieces. Pour in the egg in a thin stream and thicken it over a slow fire, stirring constantly (do not boil, so that the egg does not precipitate!). Finally, flavor with rum. Fill the pancakes with the nut filling, then roll them up or fold them in half and then into quarters and place them on a plate, so that they half overlap each other. Serve with hot chocolate sauce and whipped cream.

Renewal

  • Those who are gluten intolerant use gluten-free flour instead of plain flour.
  • Use Rice floor and Rice milk instead of regular floor and milk.
