Heaven and Earth


The recipe has a long family tradition. The ingredients come from our own garden. The bacon comes from the neighbor. The dish was mainly served at harvest time in autumn. The name comes from: “Heaven because the apples are harvested from above and earth because the potatoes and onions are harvested from below.”


  • 1 kg floury potatoes
  • 800 g sour apples
  • Bacon (approx. 100 g per person)
  • 3-4 onions
  • some oil, Salt
  • some butter


  1. Cook peeled potatoes as boiled potatoes
  2. Peel the apples, core them, cut them into eighths and steam them in a little water
  3. Peel the onions and cut them into rings
  4. Lightly fry the bacon in a pan with a little oil, add generous amounts of onion rings and fry
  5. Mash cooked potatoes into puree and add some butter
  6. Form a ring out of the mashed potatoes on the plate
  7. Place the steamed apples in the middle of the ring
  8. Spread the bacon and the fried onion rings over it.
