Hortobágy pancakes


The Hortobágy pancake is one of the popular dishes of Hungarian cuisine, which can be made from pork, veal or chicken, but it is also worth trying a vegan version with mushrooms. In many families in Hortobágy, it is only served when there is leftover stew or boiled meat, which is minced and added to the pancakes. It can be tried according to many different recipes, delicious, slightly spicier, baked in the oven, or traditionally served with a thick sauce.


For the stew:

  • 1 kg of minced pork
  •  a little oil
  •  3 heads of red onion
  •  2 cloves of garlic
  •  1 piece of red bell pepper
  •  1 piece of sharp hot pepper
  •  2 pieces of tomato
  •  1 tablespoon of red pepper
  •  water as needed
  •  salt and pepper  30 dkg of sour cream or cream

For the pancakes:

  • 2 eggs
  •  4.8 dl milk
  • 12 tbsp flour
  •  1 pinch of salt
  •  3 tbsp olive oil for frying (optional)



  • Season the meat with salt and pepper, then cook it in a pan with a little oil for 5-8 minutes then put it to a plate and set it aside.
  • Finely chop the onion and sauté it in a little oil until translucent, then add the crushed garlic, finely chopped peppers and tomatoes.
  • After about 3-4 minutes of frequent stirring, stir in the red pepper, then place the thighs on top and pour water (enough to cover the meat).
  • Cook the stew until the meat becomes so soft, while seasoning with salt and pepper.When the stew is ready, take out the meat and cut the meat into small pieces.
  • To keep it from being dry, mix in 3-4 tablespoons of the juice.
  • Measure the sour cream into a bowl, add 2-3 tablespoons of the juice, mix, pour back and bring to a boil.


  • Mix the dough ingredients until smooth, then bake as usual.


  • Fill the pancake with meat according to your taste, then fold it into any shape you like, pour the juice over it, and if you want, you can even put sour cream on it.


  • Put aside some of the juice and you can pour some on the pancake when they are served. This meal is more delicious in this way.
