Potato cake from tray

History

Especially at the end of the storage period of the potatoes, they lose their consistency. In the case of old peasant recipes, care was taken to ensure that everything was used.

Ingredients

  • 1500g old potatoes
  • 1 Ei, 85g Gries, 85g Mehl
  • 1-2EL Majoran
  • 1 large onion
  • salt, freshly ground pepper
  •  2 tbsp lard
  • 250g lean smoked bacon in thin slices

Instructions

  1. Peel the potatoes, grate coarsely. Allow potato water to settle in a bowl.
  2. Take 2-3 tbsp potato water.
  3. Mix the egg, semolina, flour, marjoram and finely chopped onion into the potato mixture, season with salt and pepper to taste.
  4. Grease a baking tray thickly with lard, spread the potato mixture on top
  5. Top with slices of bacon
  6. Bake at 190° in a preheated oven for 45-60 minutes
  7. Cut into rectangular pieces while still hot and serve immediately

It is essential to use old potatoes from the previous year. This year’s potatoes contain too much water for this dish.

Vegetarian option: topping with leek, bell pepper and onions.

Lard can be replaced with oil or clarified butter.
